Apart from racing, Newmarket can boast another area in which it is second to none, the quality of its Newmarket sausages!
.
And that is official, as one local firm won a national award for its products. However, it is best to sample the goods for yourselves and make up your own minds which firms recipe is your favourite.
The Waggon & Horses
Newmarket sausages have always been a sought after commodity and since Victorian times recipes have been a carefully guarded secret of each butcher, who also prides himself on the quality of the local meat he selects. It was once a tradition to take home sausages after visiting Newmarket races and the, then, dozen or so butchers’ shops in the town struggled to keep up the heavy demand.

A sort of black market in sausages grew up where gangs from the races would try to dishonestly obtain more than their quota from the butcher! One local firm used to supply the Royal household with a weekly consignment of Newmarket sausages despatched to Scotland by train.

Today, thankfully, there is an abundant supply from several producers in, or near, the town. Visit the local butchers’ shops or contact Tourist Information for details.
